Ingredients:
For the Marinade:
- 500 grams boneless chicken pieces (cut into small bits)
- 1 cup thick yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt (as per your taste)
For the Batter:
- 1 cup chickpea flour (besan)
- 2 tablespoons rice flour
- 1 teaspoon red chili powder
- A tiny bit of baking soda
- Salt (as per your taste)
- Water (enough to make a thick batter)
Other Stuff You'll Need:
- Vegetable oil (for frying)
- Curry leaves (optional, but they add great flavor)
Steps:
1. Marinate the Chicken:
Start by marinating the chicken. In a big bowl, mix the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and some salt. Stir it well until it's all smooth.
2. Add Chicken to the Marinade:
Put the little chicken pieces into this marinade. Make sure they all get a good coating. Cover the bowl and put it in your fridge for about 30 minutes. This lets the chicken soak up all those tasty flavors.
3. Make the Batter:
In another bowl, make the batter for covering the chicken. Mix chickpea flour, rice flour, red chili powder, a tiny bit of baking soda, and some salt. Slowly add water while you stir until you get a thick batter. It should stick to a spoon but not be too runny.
4. Heat Oil for Frying:
In a deep pan or fryer, heat some vegetable oil over medium-high heat. To check if it's hot enough, drop a tiny bit of batter into the oil. If it bubbles and comes up to the surface, the oil is ready for frying.
5. Coat and Fry the Chicken:
Dip each marinated chicken piece into the batter to make sure it's covered nicely. Gently put these coated chicken pieces into the hot oil, a few at a time, so they have space to cook. Fry them until they turn a lovely golden brown and become crispy, which usually takes around 5-7 minutes for each batch.
6. Remove and Add Some Flavor:
Use a slotted spoon to take the chicken pakoras out of the oil and put them on a plate with paper towels to soak up extra oil. If you like, you can sprinkle fresh curry leaves on top for even more flavor.
7. Serve While They're Hot:
